As the summer scorch subsides to more manageable, milder temperatures, it is the perfect time to jump in the car and head off to explore the beautiful Mallorcan countryside. We packed a hamper full of delicious and healthy dishes – inspired by the season’s harvest – to enjoy a picnic surrounded by the sights and scents of nature.
Tomato tartlets
The perfect picnic food, these tasty savoury tartlets are filled with sautéed red pepper, paprika, tomatoes and basil, all encased in delicious shortcrust pastry. Use different varieties of cherry tomatoes for added prettiness!
Couscous with pomegranate
This versatile North African staple is often best served simply, with pomegranate seeds providing pops of sour sweetness and green unroasted pistachios bringing a fresh, nuttiness to the experience.
Roast butternut squash salad
Closely related to the pumpkin, the sweet and earthy flavours of the butternut squash are the epitome of autumn. An apple cider vinaigrette dressing provide a tart balance while flaked Mallorcan almonds add a local touch.
Simple bean salad
There’s no need to tinker with this classic bean salad, which combines white and red kidney beans with red onion, cucumber and mustard vinaigrette. Radishes bring their unmistakeable peppery tang to the mix.
