Tristán Gourmet Restaurant
A mainstay of the island’s gastronomic scene since chef Gerhard Schwaiger took up his position in 1986, Tristán gained its first Michelin star in 1987 and both restaurant and Schwaiger have received numerous other awards. With a prime Puerto Portals waterside setting, it attracts a glamorous set of sophisticated diners for Schwaiger’s elegant cuisine, based on fresh seasonal produce. In 2002 he took the traditional Spanish concept of tapas and created his “Tasting Tapas Menu”. More than 800 wine references are offered. Tristan was renovated in 2010 and, after the winter break, is now open again for the season. At time of writing, Schwaiger had yet to reveal his 2011 menu and prices (expected to be similar to last year’s) but details should now be on the website. The restaurant is open for dinner only from Tuesday until Saturday, and closed on Sunday and Monday.

Es Moli d’en Bou
The only Michelin-starred cuisine on the island produced by a Mallorcan chef, Tomeu Caldentey, who opened his restaurant in 2000. The chef patron’s philosophy is to offer simple, creative cuisine based on Mallorcan recipes and the island’s seasonal produce. The Michelin star was awarded in 2004. Es Moli d’en Bou offers two tasting menus: The Menú Classic is 55 €, 70 € (basic wines included), or 85 € (premium wines included). The Gran Menú Tomeu Caldentey is priced at 78 €, 100 € (basic wines included) or 125 € (premium wines included). From Tuesday to Friday, they offer an express midday menu at 37 €, including water and two glasses of house wine. Prices shown are exclusive of VAT. Closed on Monday.

Es Raco d’es Teix
Beautifully located at the foot of the Teix mountain in Deià and owned by German chef
Josef Sauerschell and his Mallorcan wife Leonor, Es Raco’s maître d’. The chef’s cuisine has twice won a Michelin star – the first time when he worked at the village’s famous “La Residencia” hotel. The cuisine at Es Raco won him a star in 2002. It’s based on classical Mediterranean cuisine, with a modern individual twist. Examples from the à la carte menu include Lobster salad with Avocado, Orange and Herbs (33 €), Carpaccio of Venison with Escabeche of Quail, Mushrooms and Beans (27 €), Turbot in Cava sauce with Truffle and Risotto with Leek (39 €), Medaillon of Venison with Cherry-Armagnac sauce (39 €) and chocolate sponge cake with Pineapple, Tarragon and Tonka Bean ice cream (18 €).
Prices include VAT. Open for lunch and dinner from Wednesday to Sunday.
